Mexican beef stew with beans

When you want something spicier, a great recipe for an indispensable dish is Mexican beef stew with beans. prepare this delicious, hearty stew and don't forget to sprinkle it with your favorite greens.

INGREDIENTS

  • 0.8-1 kg of beef
  • 1-2 spring onions
  • 1 yellow sweet pepper
  • 2-3 cloves of garlic
  • 15 g of ginger root
  • 2-3 tablespoons of olive oil
  • a pinch of crushed cumin seeds
  • a pinch of cinnamon
  • a pinch of dried oregano
  • chili powder to taste
  • 0.5 tablespoon of flour
  • salt
  • about 400 ml of beef broth
  • 1 can (400 g) tomatoes without skins
  • 1 can (400 g) of canned beans

For submission:

  • chopped parsley leaves

PREPARATION

Heat a tablespoon of oil in a large pan and throw the washed and drained meat cut into strips into it. Bake it for about 4-5 minutes, until the surface is nicely browned. Then scoop it out onto a plate.
In the pan where the meat was fried, add a little more oil and add the peeled and chopped onions. Fry for about 5-6 minutes while stirring. Then add the washed and chopped pepper. Bake for another 3-4 minutes.
Then mix the peeled and finely chopped ginger root, spices (except oregano) and flour to the onions and peppers. While stirring, cook on low heat for about 2-3 minutes. Add the broth a little at a time. Shake the tomatoes and add the oregano. Heat on medium heat for about 10 minutes.
Now return the meat to the pan, put the lid on. Simmer the meat over low heat for 1.5 hours until it becomes soft. 15 minutes before until the end of the stew, add the drained beans. Taste and add salt or spices if still missing.
