Crispy grilled catfish - a recipe that will not leave you indifferent. I had read that catfish is cooked similarly in the southern part of the United States. Almost all of their recipes use skinned catfish. I've never tried skinning a catfish myself, but it turns out it's not that hard.

INGREDIENTS
- 1 catfish (less than 1 kg)
- 50 gr. melted butter
- 4 hours ground breadcrumbs
- salt, ground pepper mixture
- a mixture of dried chopped vegetables (carrots, celery, onions, etc.)
PREPARATION
Catfish skin is very slippery, it is best to use small tongs to hook it, my husband lent me them from his work tool box. I learned how to do it from this video. After peeling off the skin of the catfish, you can see how beautiful and pink its meat is.
So, first I skinned the catfish. I lightly cut the skin around the head of the catfish with a sharp knife and tried to peel off a small edge of the skin. I pinched that edge of the skin firmly with the work forceps and peeled off the skin while holding the fish firmly.
The skin peels off easily enough and very cleanly, but you need firm strength to hold the fish with one hand, as it is slippery, and use the other hand to firmly peel the skin with tongs. The catfish came out of my skin after about five minutes of work.
Then I removed the catfish's head and rinsed it and dried it well with a paper towel.
I mixed the breadcrumbs with chopped pieces of dried vegetables, salt and pepper.
I melted the butter and spread it well on the catfish.
I topped the buttered catfish with the breadcrumb mixture. I tried to get as many breadcrumbs as possible to stick to the catfish, pressing them to the meat with my hands.
It is better to grill the fish dipped in this way on the direct fire of heated coals. Try to cook the tail in the lower heat zone and the rest of the fish in the hotter zone of the grill. I cooked the fish on both sides for 10 minutes.
When the fish was already fried, I pushed it away from the coals so that it was not on top of them, but next to them, and left it to cook completely for another 5 minutes, covering the barbecue lid.
I put the cooked fish on a plate, its meat easily separated from the bone. We ate the fish with an autumn salad made from the last local tomatoes.

P.S. You can cook catfish in this way in the home oven, the meat of the cooked catfish is juicy and very easily separated from the bone.
