How are handmade knives made? A look at the STYLE DE VIE Authentique workshop

Making a knife requires a lot of time, energy and, most importantly, patience. The beginning of a knife is a piece of raw steel, which is transformed into a gracefully shaped, sharp knife, before going through many processes. 

The result is determined not only by careful materials, such as the type of metal, the material of the handle, but also by the human factor: knowledge, skills and abilities.

Production of Style de Vie FORGED knives

The beginning of the knife is high-quality, certified steel selected according to the required characteristics. FORGED knives are made of Japanese steel. If Olive Forged collection knives are prepared from 7cr17mov, meanwhile VG10 Forged and Kata Forged - from 5 layers of VG10 steel, the parameters of which are constantly checked.

Rectangular metal blanks are heated at high temperatures in order to harden them. This is a very important part of knife production. If the technology is not followed, the inaccuracy of just a few degrees and minutes can "damage" the quality of the steel and, at the same time, the quality of the future knife. 

After the metal is hardened, the workpiece begins to be shaped. In this way, the knife gradually begins to acquire the required thickness (all FORGED collections, it is the same - 2 mm) and the intended form. More about knife shapes - in the next posts.

The steel is hammered and chiseled multiple times to produce the unique forged metal patterns on the blade characteristic of the FORGED series. Olive Forged and VG10 Forged selected stop hammers, meanwhile Kata Forged - extremely small. Accordingly, the pattern they leave is also different.

Style de vie knives

After forming the mold, the metal is reheated. Once heated to the required temperature, the FORGED logo is hammered in. You can see it on the blade of every knife, not far from the handle.

Hot steel is dipped in a special medium in order to acquire the appropriate hardness and certain mechanical and physical properties.

The Rockwell scale (HRC) is used to measure hardness. The higher this number is, the longer the knife stays sharp, it is harder, but at the same time it is more brittle (has more iron). Olive Forged collection knives have 58, Kata and VG10 - 60 Rockwell (HRC) hardness.

After obtaining the intended hardness, the metal is polished for the first time. After this process, the blade is installed into the selected handle. The handle is polished, and a detail decorated with a forged pattern is installed at the end. At the same time, it extends the design, echoes the forged pattern on the back of the handle, and at the same time balances the weight of the knife.

Olive Forged collection knives boast natural olive wood handles. Olive wood is characterized by a light, but extremely expressive wood pattern, antibacterial properties, it is a hard wood that hardly absorbs moisture. 

VG10 Forged special root wood is selected for collection knives, and Kata Forged - root wood with a special composite filler, which gives an atypical, but extremely expressive handle pattern.

Knife sharpening is the most important stage in the whole process. Whether your knife will cut accurately and comfortably and sharpening will last as long as possible depends on the skill and knowledge of the craftsman. Each knife is carefully prepared by the hands of experienced craftsmen. 

For sharpening the knives of the FORGED collection, special Japanese tapes of different grits with water are used. 

Depending on the shape of the knife and the metal, knives are sharpened at different angles: e.g. VG10 and Olive Forged the chef's knives of the collection require a 22-degree angle, while Kata - 18.

After this process, craftsmen carefully inspect each knife for straightness, edge and sharpness.

Knives are thoroughly cleaned before being packed in special wooden boxes with padding. The blade is covered with a protective layer - natural oil.
